2 Sweets for Valentine

Hillside Veranda Kitchen

There is always something cooking in the Hillside Veranda Kitchen and for Valentine Day and the month of February there is no exception. This time of year, the sweets must not only show love but should taste like love when you eat them.

 CASSAVA BAKE WITH CHOCOLATE CHIP.

Everything in this recipe will remind you of the sweetness of love.

 Ingredients

2 Large Cassava

1 egg

½ can sweet condense milk

¼ can evaporated milk

¼ can coconut milk

1 teaspoon vanilla

½ teaspoon cinnamon

¼ teaspoon nutmeg

¼ cup white sugar

4 tablespoon butter

2 tablespoon flour

1 teaspoon sea salt

¼ cup chocolate chip

 

Directions

(1)        Peel and chop Cassava into three parts and boil until tender but firm.

(2)        Use large side of grater to grate cassava and set aside.

(3)        Whisk one egg! Add egg, melted butter, condense milk, coconut milk, evaporated milk, vanilla and sugar in blender. Blend well to combine.

(4)        Add flour, cinnamon, nutmeg, salt and cassava and combine.

(5)        Pour liquid mixture into flour and combine well.

(6)        Spoon into greased small container for individual serving or one large pie dish.

(7)        Press chocolate chip into top of mixture.

(8)        Preheat oven to 350 and bake for 20 minutes or until top is brown to your liking.

Note: top with vanilla ice cream to serve. Enjoy.

JAMAICA RED APPLE INFUSED WITH GINGER SYRUP

Ingredients

3 large Jamaica red apples

½ cup white sugar

1 teaspoon vanilla

¼ teaspoon cinnamon

¼ teaspoon mix spice

¼ lb fresh Jamaican ginger

1/3 cup Appleton rum

Directions

(1)        Wash the apples and remove the core.

(2)        Cut into thin slices. (Spread on clean paper towel to allow excess water to evaporate.

(3)        Wash and peel and grate ginger using fine side of grater.

(4)        In a pot on medium heat add sugar, vanilla, spices, ginger and apples.

(5)        Allow to cook until melted, always stirring.

(6)        When apples are all cooked with only small pieces visible add rum.

(7)        Continue to cook. Stirring to prevent burning. Allow liquid to caramelize to desired consistency.


Note: Serve on toast or enjoy by itself.
